Who doesn’t love pancakes. But did you know they can be made in advance and frozen? They’ll keep perfectly fine for a month or two. Once defrosted they easily re-heat in the oven, hold well and can be endlessly customized. Or make them on-site with the use of multiple pancake batter dispensers and a large grill. I created this menu for a western-theme church Youth Conference dinner held at the Morrell Ranch in Gallatin Missouri. There were approximately 230 teens and leaders in attendance. This is another fantastic menu if you’re new to cooking for a crowd. With the right equipment it’s a very easy meal to prepare and serve. All recipes can be assigned out to volunteers to make in advance. Go for it!

Your Game Plan
Simply assign a recipe or activity in each column to your volunteers and provide them a link to this page. I generally get 4-5 volunteers for each recipe and have each volunteer make 1 or 2 batches. Many hands make light work. You’ll notice there’s nothing planned for the last hour before serving except setting out the ice. There’s a reason for that. Always work in advance.

1 Hour Before Serving | No need to thaw. Just bake at 350, in foil packets, until pancakes are soft and warm. Then hold, in foil packets, in a 200 degree oven till serving time. | Set our on serving line. | ||||
